When I actively close unused apps/tabs/tasks, then VM runs ok. I had to change my use pattern to make sure memory pressure is kept in green/orange to stop the machine slowing down. Update 2: It turns out its my use pattern - I never close background apps and often have 30-40 tabs running in Edge at any one time. Update 1: without PD running i was already using around 10gb ram. There is not enough ram and the machine will slow down. TLDR: if you run Parallels Desktop VM (Win11) and likes to have lots of background apps running - dont get the 16gb model, get at least 32gb. I can live with the minor inconvenience so I am not too bothered, but still thought this might be useful information to share with others.

It was my fault really not testing the machine thoroughly during my testing. At first, the machine chugs along ok, but shortly the entire machine would become chopping and renders all workflow to a stop, on both Mac and PC VM.
I am wrong - whenever i fire up PD (latest version, using auto congifuration 4c and 6gb ram), the mac would go into 8-10GB ram swap. Therefore I thought this time would be the same. I have had several MBPs in the past (pre-2015 models) all with 16gb ram and i never had any slow down issues. I do use Parallels Desktop for some work related windows apps, so was thinking/hoping PD on this latest MBP should not be a problem. I was one of those people who was unsure about how much ram to get (16gb va 32gb), but decided to go with the 16gb because I consider myself by in large a 'non-pro' user: i use photoshop/lightroom and lots of office suite apps, notes, pdf, music, spotify, youtube videos.etc. I purchased a 10c/16c MBP 14 inch 2021 model. If you like me like to have lots of background apps running - then 16gb is probably not enough. Just sharing my experience if anyone is wondering what the performance is like running Parallels Desktop VM on a 16GB 2021 MBP - it is not good and i would advise against getting the 16gb model Make sure you have enough memory otherwise the machine will choke - close unused apps/tasks/tabs to free memory up.
